- Meat Balls
- 1 white onion diced
- 2 cloves finely diced garlic
- 250g beef mince
- 1tsp mixed herbs
- ½ tsp English mustard
- 2tbsp tomato ketchup
- 1 egg
- 50g panko breadcrumbs
- Seasoning
Method
- Dice the onion and garlic
- Place mince in a large bowl
- Add all ingredients into the bowl and mix altogether
- Season the mince at this point
- Form meat balls by rolling the meat between your 2 hands
- Fry off the meatballs in a hot pan until brown on all sides
- Place on an oven tray and cook at 180 degrees for 15 to 20 minutes
Tomato sauce
- 2 red onions diced
- 1 red and 1 yellow pepper diced
- 20 basil leaves chopped
- 4 garlic cloves finely diced
- 2tbsp tomato puree
- 1tbsp mixed herbs
- 2 small tins chopped tomatoes
- 1tbsp caster sugar
- 150mls red wine
- 2 vegetable stock cubes
- Seasoning
Method
- Dice the onion and peppers
- Sweat off the vegetable in oil 2 minutes and add the garlic, tomato puree and herbs
- Add and wine and reduce completely
- Add the tinned chopped tomatoes.
- Add the stock cubes and sugar
- Reduce until a sauce consistency has been reached
- Pour the sauce over the cooked meatballs and serve with rice or pasta
